Choose Rotate all pages when the whole document came in sideways — a single scan run through a scanner in the wrong orientation, for example. Choose Rotate selected pages when only a few pages in an otherwise-correct document need fixing; tap each page's thumbnail to mark it, and only those pages rotate while the rest of the document stays untouched.
